GARLIC BREAD - Included in "Cooking With Clyde"!

INGREDIENTS

  • 1 stick butter (8 tablespoons), softened to room temperature
  • 2 large cloves garlic, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon mayonnaise
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons finely chopped fresh Italian flat-leaf parsley
  • 1/2 teaspoon dried oregano
  • 1 1-lb. loaf of good quality Italian bread, unsliced (or a 1-lb. loaf of French artisan bread, unsliced)

Thoroughly combine all ingredients (except for the bread) in a small bowl.

Preheat oven to 375 degrees.  Halve bread loaf lengthwise and place each half on a large piece of aluminum foil.  Spread garlic butter on cut sides of bread, dividing evenly between the two loaf halves.  Fold up sides of foil so that the bread is covered, but do not let the foil touch the top of the bread.

Place bread halves on a baking sheet, cut side up, and bake for 20 minutes.  Fold back foil to expose tops of bread and continue to bake until tops are golden brown, approximately an additional 5-10 minutes.

Place bread halves on a cutting board and with a sharp serrated knife cut into slices of desired thickness.  Serves 6
